Tiramisu Recipe

Tiramisu is an iconic Italian dessert featuring layers of espresso-soaked ladyfingers, mascarpone cream, and cocoa powder. Its creamy texture and coffee flavor make it a sophisticated dessert for dinner parties, holidays, or indulgent treats. Properly prepared, it is light yet decadent, balancing sweetness, bitterness, and richness.

Ingredients

  • 6 large egg yolks
  • ¾ cup (150g) granulated sugar
  • 1 cup (240ml) heavy cream
  • 1 lb (450g) mascarpone cheese
  • 2 cups (480ml) brewed espresso, cooled
  • ¼ cup coffee liqueur (optional)
  • 24–30 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. Prepare mascarpone cream
Whisk egg yolks and sugar over a double boiler until thick and pale. Remove from heat, let cool slightly, then fold in mascarpone cheese. Whip heavy cream to stiff peaks and gently fold into mascarpone mixture.
  2. Prepare coffee mixture
Combine cooled espresso and coffee liqueur in a shallow dish.
  3. Assemble tiramisu
Dip ladyfingers briefly into coffee mixture, ensuring they are soaked but not soggy. Layer soaked ladyfingers in a 9×13-inch dish. Spread half of mascarpone cream over ladyfingers. Repeat layers, ending with cream.
  4. Chill and serve
Cover and refrigerate at least 4 hours or overnight. Dust with cocoa powder before serving.

Tips for Tiramisu

  • Use fresh eggs or pasteurized eggs for safety.
  • Do not oversoak ladyfingers; they should hold structure.
  • Refrigerate overnight for best flavor melding.
