Ingredients
- 1 lb (450g) boneless chicken thighs
- Salt and pepper to taste

- ¼ cup soy sauce
- 2 tablespoons mirin
- 2 tablespoons sake or water
- 2 tablespoons brown sugar
- 2 garlic cloves, minced
- 1 teaspoon ginger, minced

Instructions
- Season chicken
Pat chicken dry and season with salt and pepper. - Cook chicken
Heat oil in a skillet over medium-high heat. Cook chicken 4–5 minutes per side until browned. - Prepare sauce
Mix soy sauce, mirin, sake, brown sugar, garlic, and ginger. Pour over chicken and simmer until thickened. - Serve
Slice chicken, drizzle with sauce, garnish with sesame seeds and green onions. Serve with rice or vegetables.
