Ingredients

Instructions

  1. Preheat oven and prepare pan
    Preheat the oven to 350°F (175°C). Grease and line an 8-inch loaf pan with parchment paper.
  2. Mix dry ingredients
    In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar
    In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Add milk, lemon, and vanilla
    Stir in milk, lemon zest, lemon juice, and vanilla extract until combined.
  5. Combine wet and dry ingredients
    Gradually fold dry ingredients into the wet mixture until smooth. Avoid overmixing to keep the cake tender.
  6. Bake the cake
    Pour batter into the prepared loaf pan. Bake for 40–50 minutes, or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.

    Mix lemon juice and sugar in a small bowl. While the cake is still warm, pour the glaze over the top so it soaks in, adding flavor and moisture.
