Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 5 egg yolks

Instructions

  1. Prepare custard
    Heat cream, milk, and half the sugar until steaming.
  2. Whisk yolks
    Beat yolks with the remaining sugar, temper with hot milk, and return to pan. Cook gently until slightly thickened.
  3. Flavor
    Stir in vanilla.
  4. Chill
    Cool completely in the refrigerator.
  5. Churn and add cookies
    Freeze in an ice cream machine. In the last 5 minutes of churning, stir in crushed cookies.
