Coconut Cake is a tropical, moist, and flavorful dessert that features coconut in both the cake and frosting. Ingredients

For the Cake:

  • 2½ cups (320g) all-purpose flour
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (230g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 cup (240ml) coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup (90g) shredded coconut

For the Frosting:

  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 3 cups (375g) powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup (45g) shredded coconut for topping

Instructions

  1. Preheat oven and prepare pans
    Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. Mix dry ingredients
    In a medium bowl, combine flour, baking powder, and salt. Stir in shredded coconut.
  3. Cream butter and sugar
    In a large bowl, beat butter and sugar until fluffy. Add eggs one at a time, mixing well. Stir in vanilla extract.
  4. Combine wet and dry ingredients
    Alternate adding dry ingredients and coconut milk to the batter, beginning and ending with dry ingredients. Mix until smooth.
  5. Bake the cake
    Divide batter evenly between pans. Bake for 25–30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks.
  6. Prepare frosting
    Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract. Beat until fluffy.
  7. Frost and decorate
    Frost the cooled cakes, stacking layers. Sprinkle shredded coconut over the top and sides.
