Ingredients

  • 2¼ cups (280g) all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) packed brown sugar
  • 1 large egg
  • ⅓ cup (80ml) molasses
  • ¼ cup (50g) granulated sugar for rolling

Instructions

  1. Preheat oven and prepare pans
    Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix dry ingredients
    Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
  3. Cream butter and sugar
    Beat butter and brown sugar until fluffy. Add egg and molasses, mixing thoroughly.
  4. Combine ingredients
    Gradually fold dry ingredients into wet mixture. Roll dough into balls and coat in granulated sugar.
  5. Bake
    Place balls on prepared sheets and bake 10–12 minutes until tops are slightly cracked. Cool before serving.
