Lemon Herb Grilled Chicken is a bright, flavorful dish perfect for summer cookouts or light dinners. Ingredients

  • 4 boneless, skinless chicken breasts
  • ¼ cup (60ml) olive oil
  • Juice and zest of 2 lemons
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Prepare marinade
    In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  2. Marinate chicken
    Place chicken breasts in a ziplock bag or shallow dish. Pour marinade over chicken, ensuring all pieces are coated. Marinate for at least 30 minutes, preferably 2–4 hours in the refrigerator.
  3. Preheat grill
    Preheat grill to medium-high heat. Lightly oil the grates to prevent sticking.
  4. Grill chicken
    Grill chicken 6–7 minutes per side, or until internal temperature reaches 165°F (74°C). Baste with remaining marinade occasionally for extra flavor.
  5. Rest and serve
    Let chicken rest for 5 minutes before slicing. Garnish with fresh parsley and serve with grilled vegetables or a salad.
