Ingredients

  • ½ cup (100g) brown sugar
  • 1 can (20 oz/560g) pineapple slices, drained (reserve juice)

  • 1½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) pineapple juice (reserved from can)
  • ¼ cup (60ml) milk

Instructions

  1. Preheat oven and prepare pan
    Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Prepare pineapple topping
    Melt ¼ cup butter in the pan over low heat. Sprinkle brown sugar evenly over butter. Arrange pineapple slices on top, placing cherries in the centers if desired.
  3. Mix dry ingredients
    In a medium bowl, whisk together flour, baking powder, and salt.
  4. Prepare cake batter
    In a large bowl, beat softened butter and granulated sugar until fluffy. Add eggs one at a time, then stir in vanilla extract. Alternate adding dry ingredients, pineapple juice, and milk until smooth.
  5. Bake the cake
    Pour batter over pineapple arrangement, smoothing evenly. Bake for 35–40 minutes, or until a toothpick comes out clean. Let cool for 10 minutes.
  6. Invert the cake
    Carefully run a knife around edges. Place a serving plate over the pan and invert the cake. Gently lift the pan to reveal the caramelized pineapple topping.
